(Not Giant) Chipotle White Beans

White Bean, Bread Crumb and Pesto

We go through a health kick from time to time, and I wanted to try a week of only vegetarian food. It didn’t work out, but not for lack of trying.


Maybe it’s because we keep thinking about the meats we could add into recipes to make them more delicious. This recipe from 101Cookbooks managed to be hearty, vegetarian, and tasty (though some chorizo wouldn’t have hurt). The cheese helped, but the combination of chipotle tomato, bread crumbs and pesto makes this dish complex in both texture and flavor. Whole Foods did’nt have large dry lima beans. This was disappointing, but great northerns were fine substitutes. I hope to try out a bunch of Rancho Gordo beans someday!
