Warm White Bean and Chicken Salad

White Bean Salad with Chicken

A fairly easy summer salad.

Pound, season, and grill chicken breast. Cut into cubes, and put aside. Meanwhile, grill an ear of corn. Cut off the kernels when cool, place aside. Dice 4 cloves of garlic and half of a large red onion. Saute the onion and garlic on medium heat in olive oil. Rinse a can of white beans in a colander. When the onion and garlic are just about to brown, add the beans, corn, chicken, and a full tablespoon or two of fresh diced thyme. Add more olive oil, season with salt and pepper. Right before serving, add a handful of chopped parsley and squeeze half of a large lemon on top. You can add parmesan or pecorino if you want.
