Oh Smitten Kitchen. You made me slice, and slice, and slice. It was just me and the knife, since the slicing attachment to the food processor has been missing since two moves ago, and I always have trouble with my $2 Japanese mandolin. But it was so worth it. Not only was it delicious, but so very pretty. While Smitten’s was one layer, I made it into two, sort of like a ratatouille lasagne, or gratin. Besides the slicing, this dish was remarkably easy. We served over couscous, it was great the next day too.
