Slow Roasted Lemon Chicken

Nigella has a way of making things sound so sensual. This lemony chicken was easy, but time consuming. I’m really on the look out for quick recipes lately since we’ve been so, so busy. Sometimes easy will do though.

Tomato Mozz

Just throw some cut-up chicken in a roasting pan with white wine, lemon, thyme, and loads of garlic. Our lemons tasted bitter, maybe because we didn’t spring for organic last time (I bet this would be wonderful with Meyers!!), but they were too bitter to eat, as Nigella suggested.     Lemon and chicken are so good together! I love throwing cut up chicken pieces into a slow cooker with some chicken broth, butter, lemon juice and thyme. Time consuming as well but SO easy!
